I'm baking a peach pie today. Kind of strange... a peach pie in February. This summer my mom and dad's neighbor's peach tree produced the most delicious peaches ever. One of my favorite variety's... O'Henry. They are easy to peel and are freestone peaches, which means the pit pops out very easy, versus cling peaches. They don't keep well. The bruise easily, they ripen fast and for those reasons you find them at farmers markets and food co-ops, etc. but rarely at grocery stores.
We had so many I decided to peel them, slice them, and freeze them in the hopes of making a pie when I was ready to consume all the calories that come with homemade pie a'la Diane... (butter, sugar, flour, ice cream).
Bob and I were driving home from the gym today and discussing dinner and he said lets make things that we have in the house already. So I said how about chicken for dinner and veggies and peach pie for dessert? OKAY!!!
He's picking up vanilla ice cream on the way home from work because that is not the type of thing we keep on hand in our freezer. The peaches are just about defrosted and the pie crust is in the refrigerator getting ready to be rolled out.
Charlotte is starting to wake up from her nap. I hear her up there talking to her buds Big Bird, Cookie Monster and Elmo. Maybe I'll be lucky and she'll go back to sleep. I hope the pie comes out good. I hope the peaches taste half as delicious as they were this summer.
